Whether you are in the Midwest, Northeast, or Mid-Atlantic, chances are you have been snowed in at least once in the past few weeks. As a Midwesterner (M Go Blue!), I am often smugly dismissive of the DC Panic Dance, done every time there’s an inch of snow, but nearly 2 feet of the white stuff is a real storm just about anywhere east of the Mississippi. Hot cocoa is always a winter favorite, and pasta is an easy “oh-my-God-I-didn’t-go-to-the-store” dinner. But my favorite way to fill the house with great smells and fill my kids with warm feelings and fun food is with Blueberry-Apple Cobbler. It’s easy to make, and it’s easy to make if you have a few apples and some frozen blueberries in your freezer. But most important, it tastes incredible! It’s great with ice cream, whipped cream, or just a fork and a bowl.
Good cobbler should have soft, well-cooked fruit, and a sweet, crunchy crust. It’s easy to get them backwards if you are going from a recipe or mix that assumes too much experience or cuts too many corners. Try this one and let me know what you think.
Ingredients
The Crisp
- 12 tablespoons of chilled, unsalted butter (1 1/2 sticks)
- 3/4 cup of all-purpose flour
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 3/4 cups oats (Quaker oatmeal is perfect)
The filling
- 3 cups of frozen blueberries (best if fresh, and frozen by you)
- 4 large apples
- 3 tablespoons of tapioca mix
- 1 cup granulated sugar
- 1/2 cup water
Equipment
- Oven
- 9×9 Pyrex dish
- Food Processor
- Mixing bowl
- 2 cookie sheets
- Large, nonstick skillet
- Measuring spoons
- Measuring cups
Directions
- Preheat your oven to 400.
- In a large, non-stick frying pan, cook apples, 1/2 cup of sugar and 1/2 cup of water for 15 minutes at medium-high heat. Set aside when soft but not mushy.
- Stir in blueberries and tapioca mix and set aside.
- In food processor, pulse chilled butter, flour, brown and white sugar until the butter is cut into small pieces and the mix is well-combined. Pour contents of food processor into a separate bowl and add oats, stir with a wooden spoon. If you don’t have a food processor, you can grate frozen butter on a box grater and mix it into the other ingredients by hand.
- Pour apple and blueberry mixture into 9×9 dish and cover with crisp.
- Bake at 400 degrees for 30 minutes.
